These are a favorite in our family.  With the grass-fed butter, parmesan and crispy skin, what is there not to like? Using the parmesan is not truly Paleo, so if you are staying strict to your Paleo diet, leave it out.  They still taste amazing!



  • 2 pounds chicken wings and drumsticks
  • 2 Tablespoons Herbs de Provence (or Italian seasoning)
  • 4-5 crushed, minced garlic cloves
  • 2 Tablespoons bacon grease or coconut oil
  • 1 Tablespoon grass-fed butter (Preferably Kerrygold)
  • 1-2 teaspoons sea salt

Preheat the oven to 400°. Spread 1 Tablespoon of the bacon grease or coconut oil on a sheet pan.  Line the chicken pieces on the pan, making sure they are spread out. Cook chicken pieces in preheated oven 10-15 minutes on each side, draining juices and flipping half way through.  They should have clear juices running out.

While they are cooking, mince the garlic and add 1 Tablespoon bacon grease, butter, spices, salt and garlic to a small sauce pan. Cook spices and garlic in oil about 5 minutes until fragrant.

Pull the chicken out and place in a large bowl. Pour the garlic mixture over the pieces and stir until coated. Dump the chicken back onto the sheet pan and spread out again. Cook another 20-30 minutes until crispy and brown.

If using parmesan, remove the chicken and place in a bowl one more time, add the parmesan to the bowl and stir to cover all pieces.
